Trout Is the Hook at the Roaring River Inn; Master Chef Delivers Fast, Healthy & Delicious Trout Recipes

CASSVILLE, Mo., Feb. 16 /PRNewswire/ -- Trout Anglaise and Trout Doria are
not new, exotic breeds of fish. They are, however, among the creative recipes
that will be prepared on opening day of trout season at Roaring River State
Park. Hearty appetites are a must at The Roaring River Inn & Conference
Center, located in southwestern Missouri, as 2,500 fishermen line the banks
for the catch of the day and three culinary experts prepare delicious trout
recipes that are sure to delight the taste buds.

During mid-morning on March 1, Chef Roland Henin, corporate executive chef
for Delaware North Parks Services (DNPS), Chef Trent Starks of The Roaring
River Inn & Conference Center and Chef Jim Lekander of Springfield's KY3 TV's
"Taste of the Ozarks" will present cooking demonstrations at the Inn. Later
in the afternoon, Chef Jim will broadcast live from the facility.

Chef Henin has provided consultation and direction for all foodservice
operations for Delaware North, one of the nation's leading hospitality
companies, since 1998. Based out of Yosemite National Park, he oversees more
than 20 food and beverage facilities. Missouri native Chef Starks manages the
food and beverage operations at Roaring River's full-service restaurant, the
Tree Top Grille. The Inn also features banquet facilities, meeting rooms, and
a gift shop.

The Grille, which will feature an all-new menu this season, serves
breakfast, lunch and dinner. Elegantly prepared food served in a relaxed
dining environment is the Inn's philosophy. Naturally, trout is a signature
dish.

There are a number of reasons why trout is such a popular food. It is
highly nutritious, a good source of protein and is low in saturated fat.

"Trout is an easy, elegant main course or appetizer. Obtaining the
freshest fish possible can make all the difference in taste," said Chef Henin.
"Smoked trout, available in most supermarkets, is a delicious first course or
hors d'oeuvre.

Most important to remember is that a well-crafted sauce compliments any
dish. With a variety of seasonings and a simple base of mayonnaise, Chef
Henin has created an array of different sauces to heighten the flavor of the
fish. Such blends as green mayonnaise, tomato mayonnaise, and a Scandinavian
mustard sauce are both colorful and flavorful.

Chef Henin's trout recipes, including the enclosed broiled Sea Trout
Anglaise, Fillet of Trout Doria and Pan Fried Trout with Lime, provide
examples of the simplicity and versatility of trout.

The Roaring River Inn & Conference Center is one of the best kept secrets
in the Ozarks. Nestled high atop a scenic overlook, the Inn provides guests
with a variety of amenities including 26 comfortably appointed guest rooms,
26 secluded cabins, full-service restaurant, gift shop and swimming pool as
well as four separate meeting rooms ideal for business functions, parties or
banquets. Roaring River is located in Cassville, Missouri, just a short drive
from the bright lights and entertainment venues of Branson, and the antiquing
of Eureka Springs. Roaring River Inn & Conference Center is operated by
Delaware North Parks Services, one of the world's leading service providers at
national and state parks, and popular tourist attractions.
